Five models: the Apple Watch Series 6, 7, 8, the SE 2, and even the original Apple Watch Ultra.
With watchOS 27, these models will only receive fundamental security updates and will not be able to use the new Siri AI features or the new tap gesture. The models that are eligible are the Series 9 and later, Ultra 2 and later, and the SE 3.

“With every software update across all our platforms, we always strive to ensure the best experience for users, thus prioritizing power and performance,” Dooley replied.
She noted that the new Siri AI and tap gesture features “perform optimally with the processing power” of the supported models. While not stated directly, it appears Apple is setting a Siri AI limitation based on the S9 chip.
If you have an incompatible model, there is a positive aspect. Older Apple Watches can still connect with an iPhone that operates Siri AI. Therefore, you can utilize your phone to access Siri AI while observing others with compatible models using it on their wrists.
